Japchae (Stir fried noodles with chicken and vegetables)

(my own recipe)
Serves 4
Ingredients:
  • 500 gr chicken 
  • 1 pack of glass noodles (about 250 gr)
  • 1 big onion
  • 1 carrot
  • 1/2 green pepper
  • 1/2  red pepper
  • 1/2 yellow pepper
  • 100 gr sugar snap peas 
  • 1 tbsp vegetable oil
  • 3 tbsp of sesame oil
  • 1 tsp of sesame seeds
  • 1 tbsp of soy sauce
For the marinade:
  • 3 tbsp of soy sauce
  • 1/2 tsp of sugar
  • 1 tsp of sesame oil
  • 1 tsp of roasted sesame seeds
  • 1 clove of garlic, minced
Step One

 Boil the noodles  according to the package, drain and mix in a tbsp of sesame oil and set aside in a big bowl (something that is big enough to mix all the ingredients).
Cut the noodles in half(or smaller if you prefer) with kitchen scissors .

Step Two

 Meanwhile, whisk together the marinade ingredients and place the mix into a bowl. Cut the chicken into thin slices and add them into the mixture. Ensure the chicken is fully covered and place the bowl in the fridge for 20 minutes. 

Step Three

 While the chicken is marinating slice the carrots, the peppers, onion and sugar snap peas.




 In a big pan, add 2 tablespoons of sesame oil, put on high heat and once hot, cook the chicken for 5 minutes or until the meat is cooked then toss it on top of the noodles. 


Step Four

 In the same pan add few drops of sesame oil and cook each vegetable at a time (according to your preference) , add sesame oil before you add each vegetable. I like them still crunchy so I leave them for less than 1 min.
 Toss each of the veggies in the bowl with noodles mix well and enjoy. If you feel it's needed you can add some extra soya sauce.




A different version with courgette, pepper, carrot, red onion and octopus .
