Oven "Fried" Chicken



Serves 4

Ingredients:
  • 4 large chicken pieces (I used 1 kg of chicken thighs)
  • 50 gr/ 2 oz / 1/2 cup plain ( all- purpose) flour
  • 2.5 ml / 1/2 tsp salt
  • 1.5 ml / 1/4 tsp pepper
  • 1 egg
  • 30 ml/ 2 tbsp water
  • 30 ml/ 2 tbsp finely chopped mixed herbs, such as parsley, basil, thyme(I didn't have any so i would say optional)
  • 65 gr / 2 1/2 oz /1 cup dried breadcrumbs(I used panko)
  • 20 gr / 3/4 oz/ 1/4 cup freshly grated parmesan cheese(I forgot to add it so also optional)
  • lemon wedges to garnish
Step One 

 Preheat the oven to 200℃/ 400℉/ Gas 6. Rinse the chicken in cold water. Pat dry with kitchen paper towel.

Step Two

 Combine the flour, salt and pepper on a plat and stir with a fork to mix. Coat the chicken pieces on both sides with the seasoned flour and shake off the excess.

Step Three

Sprinkle  little water on to the chicken pieces, and coat again lightly with the season flour.

Step Four

 Beat the eggs with the water in a shallow dish. Stir in the herbs. Dip the chicken pieces into the egg mixture, turning to coat them evenly.

Step Five

Combine the breadcrumbs and the grated Parmesan cheese on a plate. Roll the chicken pieces in the crumbs patting with your fingers to help them stick.

Step Six

 Place the chicken in a grease proof shallow pan large enough to hold them in one layer. Bake until thoroughly cooked and golden brown, 20-30 minutes(for my oven I let it 35 min and turn them midway). To test if they are done, prick with a fork; the juices that runout should be clear, not pink. Serve hot, with lemon wedges.
